Spaghetti Squash

This is a delicious squash that is currently in season and a great substitute for pasta!





INGREDIENTS:


1 spaghetti squash, halved lengthwise and seeded

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 cups chopped tomatoes

3/4 cup feta cheese

 1- 2.25 oz can sliced black olives

 1/4 cup chopped fresh basil

Directions:

1.  Preheat oven to 350 degrees F and lightly spray baking sheet with cooking oil.

2.  Place spaghetti squash cut sides down on baking sheet and bake for 30 minutes or until knife can easily be inserted through skin.  Remove from oven and set aside until cool enough to handle.

3. While squash is cooking, heat oil in skillet over medium heat. Sauté onion in oil until transparent. Add garlic and tomatoes and cook until warm.

4. Use a fork to scrape the squash until stringy layers come out and place in a large bowl. Toss with feta cheese, olives, sautéed vegetables, and basil. Also can top with a teaspoon of basil and pepper to taste. Serve warm.
